Healthy No Bake Granola Bars




Ingredients
1 cup old fashioned oats
1/4 cup millet (uncooked)
1/4 cup chia seeds
1/4 cup sliced almonds
3 tablespoons shredded coconut
2 tablespoons goji berries
1/4 teaspoon pink himalayan salt
1/2 cup walnuts
2 tablespoons flax seeds
2/3 cup peanut butter
1/4 cup honey
1/3 cup brown rice syrup
1 tablespoon vanilla extract


Directions
1. Prepare a 8x8 baking pan with parchment paper, and lightly mist with cooking spray.
2. Combine oats, millet, chia seeds, almonds, coconut, goji berries, and pink himalayan salt in a bowl.
3. In a food processor, mix walnuts and flax seeds until fine and have a moist consistency. Add to oat combination.
4. On the stovetop heat peanut butter, honey, and brown rice syrup until creamy and smooth. Add vanilla extract; stir to incorporate. Pour mixture into dry ingredient bowl and mix well until there are no dry pieces left.
5. Transfer mixture into prepared baking sheet. Press firmly and spread out tightly and evenly. Place in refrigerator for 2 hours to allow bars to set. Slice into bars, and enjoy!


(Store bars in an airtight container in the refrigerator for up to 2 weeks, or to freeze, individually wrap in plastic and place in a ziplock bag for up to 2 months).
