I love banana bread, but i'm trying to eat healthy and clean as much as possible.. so this recipe has greek yogurt, oat flour, whole wheat flour, coconut oil, and agave syrup.. You could also substitute the agave syrup with honey, or your preferred sweetener. I also threw a handful of dark chocolate chips in to help satisfy my sweet tooth.
Ingredients
1/2 cup greek yogurt
1 egg + 1 egg yolk
1/2 cup coconut oil
1 teaspoon vanilla extract (homemade recipe here)
1 cup mashed bananas
3/4 cup agave syrup or honey
1/3 cup old fashioned oats
1 cup whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1 tablespoon cocoa powder (optional)
Dark chocolate chips (optional)
Directions
1. Preheat oven to 350 degrees. Grease a bread pan and set aside.
2. In a bowl mix greek yogurt, egg, egg yolk, vanilla extract, mashed bananas, and agave syrup.
3. In a food processor, blend oats until it resembles flour.
4. Add oat flour, wheat flour, salt, baking soda, and cocoa powder (optional) to the bowl of ingredients. Mix until combined. Add chocolate chips (optional), and fold batter to incorporate.
5. Transfer batter into prepared bread pan and bake for about 55 minutes or until toothpick comes out clean. Remove from oven and allow to cool on a cooling rack.
