Dark Chocolate Cherry Scones With Merlot Icing



One of my favorite parts about summer is all the yummy fresh fruit and berries that are in season. I bought a big bag of cherries while grocery shopping. I took a small bag full to work every day throughout the week to snack on.. but I still had a bunch left, and they were starting to get too ripe. I needed to make something yummy with them fast.

What do cherries go well with? Dark chocolate.. and what does dark chocolate go well with? Red wine

Voila! Dark chocolate cherry scones with merlot icing!








Ingredients

Scones
2 3/4 cup flour
1/4 cup sugar
1/2 cup cold butter
1 cup milk
2 teaspoons baking powder
Pinch of salt
3/4 cup dark chocolate, chopped
3/4 cup cherries, seeded and chopped

Icing
3/4 cup powdered sugar
3 tablespoons merlot wine


Directions

Scones
1. In a bowl, sift together flour, sugar, baking powder, and salt.
2. Chop butter into small cubes. With your hands crumble butter into the dry ingredients so pea size  balls remain.
3. Add in chocolate and cherries and mix to combine.
4. Pour in milk and gently combine. Don't over mix. 
5. Place dough in freezer for 45 minutes, and preheat oven to 400 degrees.
6. Remove dough from freezer. Separate dough into two evenly sized pieces. Shape into 1 1/2 inch round disks. Cut dough with a pizza cutter into 6 even pieces.
7. Place scones onto a cookie sheet and bake for about 20 minutes or until golden brown. 

Icing
1. Combine powdered sugar and merlot wine in a large measuring cup. Whisk until all clumps are out. If the icing is too thick, add a touch more merlot until proper consistency is achieved. If the icing is too thin, add a touch more powdered sugar until proper consistency is achieved.
