Apple Oat Cookies With Vanilla Drizzle


Last week, one of my girlfriends gave me a bag full of these delicious organic apples she picked from her apple tree. I've been trying to think of a good recipe to kick off fall baking, so here it is! I added Manitoba Harvest hemp seeds to give it extra protein. Did you know hemp seeds have twice the amount of protein compared to flax or chia seeds? Also, feel free to substitute the egg for apple sauce, and leave out the meringue powder to make the recipe vegan. Hope you enjoy!





Ingredients
1 cup old-fashioned oats
1 cup wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 tablespoon hemp seeds
1/8 teaspoon salt
2 tablespoons grape seed oil
1 large egg
1 teaspoon vanilla extract (homemade recipe here)
1/2 cup honey
1 finely diced red apple
1 cup powdered sugar
1/2 teaspoon meringue powder
1/4 teaspoon vanilla extract
2 tablespoons water


Directions
1. Mix together oats, flour, baking powder, cinnamon, and salt. In a separate bowl whisk together grape seed oil, egg, vanilla, and honey. Add in the flour mixture slowly, stirring until just incorporated. Fold in the apple. Chill for 30 minutes.
2. Preheat oven to 325 degrees. Make balls of dough, about 2 tablespoons, and place onto a silicone baking mat. Bake for 13-15 minutes or until edges are golden brown. Cool cookies on a wire rack.
3. Mix together powdered sugar, meringue powder, and vanilla extract. Slowly add water until you reach desired consistency.
