Ingredients (Makes 5 servings):
2 packets unflavored gelatin (0.25 oz each)
2 cups boiling water
2 cups tart cherry juice (unsweetened)
2 containers (5.3 oz each) vanilla Greek yogurt (such as Oikos 20g protein)
Whipped cream, for topping (optional)
Instructions:
Dissolve the Gelatin: In a medium bowl, whisk the gelatin into the boiling water until fully dissolved.
Prepare the Yogurt Mixture: In a separate large bowl, combine the Greek yogurt and tart cherry juice. Whisk until smooth and well incorporated.
Combine Mixtures: Slowly pour the gelatin mixture into the yogurt-cherry mixture, whisking continuously to ensure a smooth consistency.
Portion into Jars: Divide the mixture evenly among five small jars or containers. For reference, the 8 oz jars from The Coconut Cult yogurt are a perfect size for these treats.
Chill: Refrigerate the jars for at least 4 hours, or until the mixture is fully set.
Serve: Before serving, top each jar with a dollop of whipped cream, if desired.
