Tart Cherry Protein Jello


If you're like me and crave a little something sweet before bed, these Tart Cherry Protein Jello cups are the perfect solution. They're rich in protein, thanks to Greek yogurt, and incorporate tart cherry juice, which is known to naturally boost melatonin levels and support restful sleep.


Ingredients (Makes 5 servings):

  • 2 packets unflavored gelatin (0.25 oz each)

  • 2 cups boiling water

  • 2 cups tart cherry juice (unsweetened)

  • 2 containers (5.3 oz each) vanilla Greek yogurt (such as Oikos 20g protein)

  • Whipped cream, for topping (optional)

Instructions:

  1. Dissolve the Gelatin: In a medium bowl, whisk the gelatin into the boiling water until fully dissolved.

  2. Prepare the Yogurt Mixture: In a separate large bowl, combine the Greek yogurt and tart cherry juice. Whisk until smooth and well incorporated.

  3. Combine Mixtures: Slowly pour the gelatin mixture into the yogurt-cherry mixture, whisking continuously to ensure a smooth consistency.

  5. Chill: Refrigerate the jars for at least 4 hours, or until the mixture is fully set.

  6. Serve: Before serving, top each jar with a dollop of whipped cream, if desired.
