I’m so excited to share this beautiful layered Mediterranean bean salad with you—not just because it’s fresh, flavorful, and packed with color—but because it was made in partnership with one of my all-time favorite kitchen brands: Weck Jars!

I wanted to create something that felt true to my style—simple, seasonal, and easy to take on a picnic or enjoy outside under the sun. This Mediterranean-inspired salad is layered with lemony dressing, chickpeas, olives, crunchy veggies, and tangy feta—all stacked in their classic 974 cylindrical jar for the prettiest grab-and-go lunch you’ve ever seen.

Layered Mediterranean Bean Salad
Serves 4–5 | Fills one Weck 974 1.5-liter cylindrical jar
A picnic-perfect salad layered with bold Mediterranean flavors—chickpeas, creamy white beans, briny olives, crisp veggies, and tangy lemon-dill dressing. Ideal for meal prep or outdoor gatherings, and beautifully presented in a Weck jar.
Ingredients
Lemon-Dill Dressing
6 tbsp olive oil
3 tbsp fresh lemon juice
1 tbsp red wine vinegar
1 ½ tsp Dijon mustard
1 ½ tsp maple syrup
3 tbsp finely chopped fresh dill
Salt and black pepper to taste
Salad Layers
1 cup canned chickpeas, rinsed and drained
1 cup canned white beans (like cannellini), rinsed and drained
¾ cup sliced pepperoncini
¾ cup diced cucumber
1 ¼ cups cherry tomatoes, halved
¾ cup thinly sliced red onion
¾ cup Kalamata olives, halved
1 cup crumbled feta cheese
Optional garnish: lemon slices, fresh dill sprigs, or edible flowers
Directions
Make the dressing: In a small bowl or jar, whisk together the olive oil, lemon juice, vinegar, mustard, maple syrup, dill, salt, and pepper until well combined.
Assemble the salad: Using a clean, dry Weck 974 jar, layer the ingredients in the following order to preserve texture and create a beautiful visual gradient:
Lemon-dill dressing (bottom layer)
Chickpeas
White beans
Pepperoncini
Cucumber
Cherry tomatoes
Red onion
Kalamata olives
Feta cheese
Garnish with fresh dill or lemon, if desired
Store & serve: Seal the jar and refrigerate until ready to serve. For best results, consume within 2–3 days. Shake gently before serving, or scoop into bowls for sharing.
