The Ultimate Banana Bread (featuring Kerigold butter)


I know I have a banana bread recipe on my blog already, (Greek Yogurt Banana Bread) but this one is for when you don't care about calories. The secret ingredient is Kerigold's cinnamon and sugar butter stick. It's about $4 for a 3.5oz stick but OHMYGAAAAAD is it worth it - I could eat that whole stick plain like Med Ryan's character in The Women (she would buy this in bulk). 


   


Ingredients

1 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 cup unsalted butter, room temperature (1 stick regular, 1 stick Kerigold cinnamon and sugar)

1 cup packed light brown sugar

2 large eggs

2 ripe bananas

1 tsp vanilla extract


Directions

1. Heat overnight to 350º. Butter and flour a 9x5 inch loaf pan and set aside.

2. In a stand mixer with paddle attachment, cream 1 stick of regular butter and 1/2 stick of Kerigold cinnamon sugar butter with brown sugar until combined.

3. Add eggs one at a time until combined.

4. Mash the bananas and add to mixer with vanilla extract. Scrape the sides as needed. 

5. Add baking soda, salt, and flour a little bit at a time until just combined. 

6. Pour into prepared loaf pan and lay strips of butter along the top.

7. Bake about 60 minutes, until a toothpick comes out clean.

8. Let cool, then remove from pan, and enjoy!
